An Easter Roast for All

Easter Sunday is just round the corner and it is a great opportunity for your venue to celebrate. Why not use seasonal vegetables to really give your customers the best of the best, even get your supplies from local farmers for a sustainable approach to this bank holiday. Cook up a storm in your venue with a fantastic Easter Lamb roast with a pairing of a great British wine! Check out the recipe below for a crowd winner!
Roast Lamb
Ingredients
Leg of lamb
3 cloves of garlic
20g butter
Fresh rosemary
Salt
Pepper
Method
- Preheat your oven to 200C.
- Peel and crush garlic and add to butter in a mixing bowl.
- Chop a large sprig of rosemary, add to the butter and mix together until a creamy paste is formed.
- Make several incisions in the lamb with a sharp knife.
- Using your fingers, massage the butter into the lamb, making sure to get inside of the incisions.
- Season to taste. Optional: with a piece of string, tie the extra rosemary sprigs to the lamb.
- Cook in oven for approx. 1 hour 30 minutes (depending on size of leg).
- Once out of the oven, leave to rest of 10-15 minutes before carving.
- Serve with roast vegetable such as potatoes, carrots and broccoli and mint sauce & Enjoy!
