About the Producer
Defined Wines are a small team of wine makers, based in the Canterbury countryside, that bring over 60 years of experience from UK, Australia, France, New Zealand and California.
Together, with Sheridan Coopers, we have created a style of Bacchus that is recognisable, yet distinctively ostentatious.
The Taste of england
Get a real taste of the southern English countryside within this wine. The Bacchus we have blended is taken from 4 separate vineyards across the south of England. Notably, 40% is from Brenley Farm, 30% is from other vineyards in Kent, 20% from Suffolk and the final 10% from Sussex.
Upon blending the grapes from all four vineyards, we decided to retain a small amount of residual sugar to give the finished wine a little more depth, ripeness and character. These wine making choices lead to a more rounded and lengthy finish.

‘This absolutely sings with fresh lobster and grilled king prawns with fresh pasta. The box-fresh acidity cuts through the richness of the lobster and the bite of the pasta stands up to the zesty nature of the wine.
Also, Green Belt is a cracking match for white meat. Poached chicken breast with tarragon sauce is a complete winner because the punchy tarragon compliments the ripe mouthfeel and the soft chicken is sublime with the textures in the wine.’

Their goals are aimed at reducing the environmental impact of English and Welsh wine making. SWGB is dedicated to reducing the carbon footprint, energy and water consumption, waste, and wine packaging from both vineyards and wineries.
They are also committed to improving winery design to reduce environmental impact, as well as maintaining the health of vineyard soils, conserving and promoting biodiversity while protecting environments by minimising pesticides and chemicals.
