Conceived in Northern Ireland, Sexton Single Malt Irish Whiskey is the brainchild of Master Blender, Alex Thomas, who is one of the few Whiskey blenders in the world.
The Sexton Single Malt Irish Whiskey is made from 100% Irish malted barley, triple distilled for smoothness in copper pot stills. Thomas took particular attention to the maturation process resulting in an ideal balance between spirit and oak as it is aged in oloroso sherry butts to achieve a depth of flavour from the wine-imbued barrel that surpasses its years. By breaking the rules of traditional single malt whiskey, Thomas set out to create an unexpected yet more approachable taste profile. As Master Blender, with fifteen years perfecting her craft, Thomas is the gatekeeper of The Sexton and its story.
The word ‘Sexton’ comes from the Latin word ‘Sacristanus‘ which means the custodian of sacred objects. The stunning and original hexagonal shape of the bottle is a reference to the stones of the Giant’s Causeway and the birth place of The Sexton. The label sports the upper section of a skeleton wearing a top hat, as well as a coach pulled by a skeleton horse with a skeleton coachman. The references to the skeletons are an association with the sexton name. A Sexton is an officer of a church, congregation or synagogue charged with the maintenance of its buildings and/or the surrounding graveyard. In addition, Sextons were often charged with the digging of graves. There is no explanation from the producer, however, for the selection of such a macabre branding.
After years of experimenting with different cask profiles and laying the liquid to rest for just the
right amount of time, I'm pleased to share a rich and deeply flavourful Irish Single Malt
that is ideal for mixing in cocktails.
Ingredients:
1 1⁄2 oz The Sexton
1⁄2 oz Amaro de L’Erborista
1⁄2 oz Fresh lime juice
1⁄2 oz Ginger syrup
Club soda to fill
Garnish: Lime wheel with candied ginger
The taste is reminiscent of dried fruit followed by honeycomb sweetness, apricots, lemon zest, prunes and oak spice. There are aromas of nuts and dark chocolate on the nose which are followed by marzipan, spice and fruit. There is a refreshing palate of mellow honeyed malt, oils and a pleasant gentle wood finish with mild sweetness.
